Multigrain Spelt Crispbread

7 T unsalted butter

1 1/2 c multigrain (rolled rye and oat) cereal - available at Trader Joes

5 t sesame seed

5 t poppy seeds

1/2 T honey

5 T spelt flour

1/2 t salt

1 t baking powder

Melt butter in a saucepan. 

Add the oat/rye flake multigrain cereal, seeds, and honey

Remove from heat and stir

Stir in flour, salt, and baking powder

Stir in 7 T boiling water

With moist hands, press or roll dough as thinly as possible on a baking sheet lined with parchment

Sprinkle top with a tablespoon each of cereal, sesame seed, poppy seed, and flax seed if you have it

Bake at 300 for 35 min. or until lightly browned

When cool break into irregular cracker sized pieces 

 

 

Biscotti

3 c white flour

2 1/2 t baking powder1/8 t salt 2/3 c unsalted butter

1 c sugar

3 large eggs

Your choice:

2 t anise seeds and 1 1/2 t anise oil

or

1/2 t sesame oil and 1 c sesame seeds and chopped dates and or apricots

Mix dry ingredients

In a separate bowl cream butter and sugar

Add eggs and choice of flavored oil

Add dry ingredients in 3 batches

Add seeds of choice

Using 1/4 of the dough roll into long log and place on a greased cookies sheets. Repeat with remaining.

Bake at 375 for 25-28 min. until lightly browned

Cool and slice on the diagonal into 1/2 inch slices

Place cut side down on cookie sheet and bake for an additional 5-7 min until lightly browned

Turn over and bake for another 4 - 5 min

Cool on wire rack 

Everything Cookies

2 c white flour

1 t baking soda

1 t baking powder

1/2 t salt

1 1/3 c unsalted butter

2 c dark brown sugar

2/3 c granulated sugar

2 large eggs

4 c rolled oats (or multigrain cereal)

2 c mixed seeds, nuts, dried fruit (I like sesame seeds, chia seeds, flax seeds, dried cranberries or cherries, currants, almonds, sunflower seeds, or you can just make chocolate chip cookies with 1 1/2 c chips).

Combine dry ingredients

In a separate bowl cream butter and sugar, add eggs

Beat in flour mixture, then oats, then seeds and nuts

Place 1 1/2 inch balls of dough (a small ice cream scoop works well) on a greased cookie sheet and bake  at 350 for 10 - 12 min. or just tinged with brown.
